Banoffee Bites

I don't know about your family but here in my household when ever its school holidays its like nothing matters. No school, No healthy food, just play and make sweets all day long.

I have two boys that are keen on desserts every night! and being the busy mum that I am, I always hear myself saying "In the school holidays darling we will make that" - Nooooo surely it can't be the school holidays already? Really? 

So with 33 minutes spare before I leave for work I need to do something quick and easy with the boys that we can bake when we get home. Banoffee Bites! and who doesn't like Chocolate, Banana and Cream? Why not throw in some pastry as well.

I made these with the boys before work - and might I tell you, they are super quick - as long as you have pastry in the freezer and your ready!.  So while I supervised (slightly - Well answered the 17 questions - that's supervising right?) The boys grabbed the ice cube tray, ingredients and and a small knife and they were completed in about ten minutes.

We placed these in the fridge and that night before dinner turned them out of the tray into the oven and they were done in minutes! The quickest and tastiest dessert ever - kid proof too!. All I had to do after dinner was cut them up - and we got a little fancy on these ones and used a ravioli cutter for a thrill!  Whipped up the cream and enjoyed!  



Puff pastry
- Chocolate cubes – Cadburys
- Bananas – sliced
- Banoffee Peanut Butter (Ceres Organic or The Little Organic Co.)
- Ice Cream or Cream for serving




1. Lay puff pastry in the tray. Place a drop of Ceres Organic Banoffee Peanut Butter in each cube. 

2. Slice of banana and break apart the chocolate into small cubes

This 'slice' is bananas, B-A-N-A-N-A-S!  **(singing Gwen Stefani 'Hollaback Girl' is absolutely an essential step)

3.Cover with a layer of puff pastry and press firmly. Once sealed flip ice tray over and gently peel away the whole dish.

You can either bake as a whole and slice after or to make little size pieces slice along the grooves. Then using a ravioli cutter or a fork push the edges together. Now place onto a tray and bake (200) until golden.

4. Once the pastry is golden on top remove from the oven and allow to cool. Serve with Whipped Cream or vanilla ice cream!
